Happy Sunday everyone! I’ve been on a banana bread kick lately. I live with my parents and they keep buying bananas that never go eaten. What they see as garbage, I see as a delicious dessert (it’s healthy since it is banana’s, right?). This is not just your basic grandma’s banana bread though—I’m talking streusel topping with a bomb Bailey’s glaze (losing the health value of bananas at this point, oops).
At this point, my parents may be intentionally buying banana’s just for them to start going bad in hopes I’ll find them and work my *magic*.
Banana Bread Ingredients:
- ½ cup butter
- 1 cup brown sugar
- ¼ cup sour cream
- 2 eggs
- 3 large ripe bananas, mashed*
- 1 tsp vanilla extract
- 1 ½ cup flour
- ¼ tsp salt
- 1 tsp baking soda
- 1 ½ tsp baking powder
*Side note: I ended up using four bananas in this recipe because I cut off some really bad brown spots on several of the bananas.
First things first, mash those banana’s in a bowl with a fork. If you have a kid in the house, this is the perfect job for them! Honey definitely is my expert banana masher.
Melt the butter and cream with the sugar in a mixer.
Add sour cream, eggs, mashed bananas, and vanilla.
Mix all dry ingredients and add to wet mixture.
Pour batter into a greased (or lined) muffin tin. This recipe makes 12 muffins or three cakes in this gorgeous Nordic Ware Bundt Quartet pan. I made this recipe twice in one week. Which is why I have muffin pictures and bundt pan pictures.
At this point, you could go ahead and bake them. However, you didn’t read this for just boring banana bread. You want awesome banana bread with streusel topping.
Streusel Topping:
- 1 stick butter, unsalted
- 1 cup flour
- ¼ tsp salt
- 1/3 cup light brown sugar
- ¼ cup sugar
- 1 tsp cinnamon
In a bowl, whisk together dry ingredients. Add melted butter until combined. It should be a very crumbly mixture.
Give those muffins (or bundts) a hefty sprinkle of this tasty mixture.
Side note: With the muffins, the streusel topping is on top. With the bundt pan, however, the streusel “topping” will end up on the bottom of the bunts once you take them out of the pan. That’s ok. It still tastes awesome.
Now you can bake at 350F for 20-30 minutes until golden brown. The top will also have a nice crunch from the streusel.
For the grand finale, you are going to want to add this Bailey’s Irish Cream Glaze.
Bailey’s Irish Cream Glaze:
- 2 ounces cream cheese, softened
- ¼ cup powdered sugar
- 1 tbsp heavy whipping cream
- 1 tbsp Bailey’s Irish Cream
- ¼ tsp vanilla extract
In a small bowl, whisk together all ingredients. Simple as that!
Drizzle as little or as much as you want. I won’t even judge if you just dunk the whole muffin in this goodness. It’s yummy. Bowls may have been licked clean.

Ingredients
Banana Bread
- ½ cup butter melted
- 1 cup light brown sugar
- ¼ cup sour cream
- 2 eggs
- 3 large ripe banana mashed
- 1 tsp vanilla extract
- 1 ½ cup flour
- ¼ tsp salt
- 1 tsp baking soda
- 1 ½ tsp baking powder
Streusel Topping
- ½ cup butter melted
- 1 cup flour
- ¼ tsp salt
- ⅓ cup light brown sugar
- ¼ cup sugar
- 1 tsp cinnamon
Bailey's Irish Cream Glaze
- 2 ounces cream cheese softened
- ¼ cup powdered sugar
- 1 tbsp Bailey's Irish Cream
- 1 tbsp heavy whipping cream
- ¼ tsp vanilla extract
Instructions
Banana Bread
- Mash bananas in a bowl with a fork.
- Melt the butter and cream it with the sugar in a mixer.
- Add sour cream, eggs, mashed bananas, and vanilla.
- Mix all dry ingredients and add to wet mixture.
- Pour batter into a greased muffin tin or tin of your choosing.
- Add streusel topping if desired. (See below)
- Bake at 350F for 20-30 minutes until golden brown.
Streusel Topping
- In a bowl, whisk together dry ingredients.
- Add melted butter until combined.
- It should be a very crumbly mixture. Sprinkle a heavy amount on top of banana bread batter before baking.
Bailey's Irish Cream Glaze
- In a small bowl, whisk together all ingredients.
- After banana bread has cooled, drizzle on top & enjoy!
